Shrimp Fritters with Chili-Lime Aioli

Total Time - 35 minutes (Makes 24 servings)

Ingredients:

  • 12 oz peeled/deveined medium shrimp, tails removed
  • 1 cup frozen corn kernels
  • 1 cup vegetable oil, for frying
  • 1 fresh jalapeño pepper
  • 1 cup Duke’s Real Mayonnaise
  • 1/3 cup Thai Kitchen Sweet Red Chili Sauce
  • 3/4 cup sliced green onions, divided
  • 1 tablespoon lime juice
  • 1 (8.5 oz) box corn muffin mix
  • 1/2 cup sour cream
  • 1 large egg
  • 1 tablespoon seafood seasoning

Steps:

  • Thaw shrimp and corn. Place oil in Dutch oven on medium-high; heat to 350°F. Chop jalapeño finely, removing membranes and seeds, if desired.
  • Combine mayonnaise, sweet chili sauce, 1/2 cup green onions, and lime juice; stir until blended.
  • Place shrimp in food processor bowl (wash hands) and pulse into small pieces. Combine shrimp with corn muffin mix, jalapeños, sour cream, egg, and seafood seasoning in large bowl; mix until well blended.
  • Scoop rounded tablespoons of batter carefully into hot oil. Cook 2–3 minutes until golden and 145°F. Transfer to paper towel–lined baking sheet. Garnish with remaining 1/4 cup green onions; serve warm with chili-lime mayonnaise. (Makes about 24 fritters.)
